Rule: use ¾ as much oil as butter (butter is ~75% fat, oil is ~100% fat).
A butter-to-oil converter helps bakers substitute oil for butter. Because butter is ~80% fat and oil is 100% fat, you use ¾ the amount of oil when replacing butter.
- 1Oil = Butter × 0.75 (use less oil)
- 2Butter = Oil / 0.75 (use more butter)
- 3Oil makes baked goods moister; butter adds flavour and flakiness
- 4For savoury cooking: 1:1 is usually fine
