Boiling point elevation is a colligative property: dissolving a solute raises the boiling point of the solvent. ΔTb = i × Kb × m. For water, Kb = 0.512 °C·kg/mol.

- 2Kb(water) = 0.512 °C·kg/mol
- 3Higher solute concentration and ionic dissociation → larger elevation
0.5 mol sucrose in 1 kg water · i=1 · Kb=0.512=ΔTb = 0.256°C → boils at 100.256°C1×0.512×0.5=0.256°C

Fun Fact
Pasta water salted at restaurant levels (~1%) raises the boiling point by only 0.05°C — essentially irrelevant for cooking speed. Salt is added for flavour, not temperature.
